野菜が主題になるとき——ミシェル・ブラスとガルグイユ
There is no single centre to this plate. Orange strips turn between green florets; pale slices catch the light beneath fine leaves. Small yellow, violet and white flowers appear at different points rather than crowning one principal ingredient. The eye keeps finding another place to begin.
The photograph records a gargouillou prepared by Éric Sapet at La Petite Maison in Cucuron, following an original recipe by Michel Bras. It offers a way into Bras’s thinking, while the particular arrangement before us belongs to Sapet’s rendition.
In an essay for MAD, Bras recalls a rural cooking tradition in which vegetables were secondary to meat and its juices. He describes his own attachment to plants as growing from childhood memories and close attention to Aubrac. Against that background, the gargouillou suggests a change in what deserves to be the subject of a dish. Vegetables become the reason to look, rather than the setting for something else.
Here, that shift is visible in the way different forms retain their identity. Rounded florets sit beside broad slices, curling ribbons and branching stems. The fine leaves cross several larger pieces, connecting them without covering them completely. This abundance remains readable because the ingredients have not all been reduced to the same shape. Their differences provide the structure.
The bowl participates too. Its green and cream markings meet the foliage around the edge, making the boundary between food and setting less abrupt. Yet the cut surfaces and repeated slices clearly show preparation. The impression of a garden emerges through the meeting of plant forms and culinary decisions; it does not require the cook’s work to disappear.
The flowers matter within this reading because they share the field with leaves and substantial vegetable pieces. They are small enough to invite attention without taking over the plate. We cannot judge their flavour or the balance of a mouthful from this photograph. What we can observe is a presentation that gives several kinds of plant material visual importance, allowing a meal to be imagined around their differences.
A similar question belongs among flowers: what changes when foliage receives the same attention as a bloom? A leaf’s branching edge, a stem’s turn or an unopened bud may deserve to remain legible. A composition can hold together through those particularities, without asking every element to resemble its neighbour.

この一皿には、中心が一つに定まりません。緑の房の間をオレンジ色の細長い部分が曲がり、繊細な葉の下では淡い薄切りが光を受けています。黄色、紫、白の小さな花も、一つの主役を飾るようにではなく、あちこちに現れる。視線は、眺め始める場所を何度も見つけます。
写真に写っているのは、ミシェル・ブラスのオリジナルレシピを基に、キュキュロンのラ・プティット・メゾンでエリック・サペが制作したガルグイユです。ブラスの考え方への入口となる一皿ですが、目の前の具体的な盛り付けは、サペによるものとして見ていきます。
MADに寄せた文章で、ブラスは、野菜が肉やその煮汁に対して脇役だった故郷の料理を振り返っています。そして植物への思いは、幼少期の記憶と、オーブラックを丁寧に観察する時間から育ったと語ります。その背景から考えると、ガルグイユは、料理の主題に何を置くかという変化を示しています。野菜そのものが、ほかの何かを引き立てる背景から、目を向ける理由へ変わるのです。
この一皿では、異なる形がそれぞれの特徴を保っていることに、その変化が見えます。丸みのある房の隣に、幅のある薄切り、巻いた帯状の部分、枝分かれする茎がある。細かな葉は、大きな部分を完全に隠さずに横切り、互いをつないでいます。豊富な要素が読み取れるのは、すべてが同じ形に整えられていないからでもあります。違いが、全体の構造をつくっています。
器も、その関係に加わっています。緑とクリーム色の斑が縁の葉と接し、料理と背景の境目を和らげています。それでも、切り口や繰り返される薄切りには、調理の手がはっきりと見える。庭のような印象は、植物の形と料理人の選択が出会うことで生まれています。自然を感じさせるために、人の仕事を消す必要はありません。
この見方では、花が葉や食べ応えを思わせる野菜の部分と、同じ場を分け合っていることも重要です。小さな花は注意を誘いながら、皿全体を占領しません。写真から、その味や一口の中のバランスを判断することはできません。見て取れるのは、さまざまな植物の部分に視覚的な存在感を与え、その違いを中心に食事を想像させる盛り付けです。
花を扱うときにも、似た問いがあります。葉に花と同じだけの注意を向けたら、何が変わるでしょうか。葉の縁の分かれ方、茎の曲がり、まだ開いていないつぼみも、その姿を見せる価値がある。隣のものと似せなくても、一つひとつの特徴によって、全体がまとまることがあります。
